The flavor of shallots can be described as a little sweet, with hints of garlic.  Since it doesn't have the same bite as onion, shallot is ideal raw in a salad or dressing, and won't overpower more delicate dishes.

Nutrition:  Shallots have an even better nutritional profile than onions.  They contain beta-carotene, vitamins B1, B6, folic acid, vitamin C and minerals such as iron, calcium, copper, potassium, and phosphorus. They also contain sulfur anti-oxidant compounds and allicin which has been found to have antibacterial, antiviral, and antifungal activities, and the phytochemical compounds in alliums have anti-mutagenic and anti-diabetic properties.
