Radicchio

A beautiful, gourmet salad vegetable of Italian origin, radicchio has an appealingly bitter and nutty flavour.  Use mixed in salads (especially good with a balsamic/maple syrup dressing) or braised and/or sauteed.

 

Nutrition:  Radicchio is a good source of dietary fiber, Vitamin B6, Pantothenic Acid (B5), Iron, Magnesium, Phosphorus, and zinc and a very good source of Vitamin C, Vitamin E, vitamin K, Folate, Potassium, Copper, and Manganese
