Kohlrabi - green, purple

Kohlrabi - green, purple

Kohlrabi is a round, tuberous cruciferous vegetable with a similar taste and texture as that of a broccoli stem or cabbage, but milder and sweeter in flavour.  Kohlrabi is excellent grated to use in slaws or patties, chopped up into sticks for a veggie platter or added to satees and stir-fries.

Nutrition:  Fresh kohlrabi is rich in vitamin C, contains good amounts of vitamin B1, B3, B5, and B6 and good levels of minerals such as copper, calcium, potassium, manganese, iron, and phosphorous.  Like other members of the Brassica family, kohlrabi contains health-promoting phytochemicals such as sulforaphane and indole-3-carbinol that protect against certain hormonal cancers and colon cancer.
