In June we harvest our garlic scapes that are the curly green tops of the garlic plant. Garlic scapes are tender and mild and are a great way to get the flavour of garlic early in the season. They are great in pesto's, sauteed, BBQ'd, and pickled.
Nutrition: Garlic is very rich in vitamin C, vitamin B6, and manganese, and contains decent amounts of selenium, calcium, copper, potassium, phosphorus, iron and B1. It is widely known to boost the function of the immune system, reduce blood pressure, and improve cholesterol levels.
