Beets - red, specialty

We grow a variety of beets from magenta reds, golden, striped, to cylinder types that are perfect for canning.  Beets are the perfect root vegetable to eat raw, grated into salads and are delicious steamed or slow roasted. They pair well with a wide variety of foods including cheese, walnuts, horseradish, chives, and citrus. They can also be preserved by pickling, which offers an incredible flavor profile for the beets. 


Nutrition:  Beets are high in vitamin C, fiber, potassium, manganese and folic acid.  The nitrates in beets are converted into nitric oxide in your body which helps to relax and dilate your blood vessels, improving blood flow and lowering blood pressure.  Beets are a unique source of betaine, a nutrient that helps protect cells, proteins, and enzymes from environmental stress.  The powerful phytonutrients that give beets their deep crimson color may ward off cancer, as they have been shown to reduce tumor formations.  Traditionally, beets are valued for their support in detoxification and helping to purify your blood and your liver.

Beet greens have a higher nutritional value overall than the beetroot itself, and actually, have more iron than spinach.  They contain important nutrients like protein, phosphorus, zinc, fiber, vitamin B6, magnesium, potassium, copper, manganese, beta-carotene, vitamin C, and calcium.
