Arugula

Arugula has a peppery flavour with nuances of nuts and mustard.  It can be used in salads, chopped up and added to rice and bean or meat dishes, cooked with pasta and pizza, and makes a wonderful pesto.


Nutrition:  Arugula is rich in folates, an excellent source of beta-carotene, b-vitamins, vitamin K.  It has healthy levels of vitamin C and, like other brassicas, contains good amounts of phytochemicals that have been shown to be cancer preventative.  It contains good amounts of iron and copper and small amounts of other essential minerals and electrolytes such as calcium, potassium, manganese, and phosphorus.
